OT: scan text -> ascii?

OT: scan text -> ascii?

I'm looking for a program or plugin that will allow me to scan pages
of text (such as from a book) into ASCII that I can manipulate in a
text editor. My scanning software is Visioneer, my platform Win98.

Any suggestions?
