But why a Cheshire Cat?

A long time ago, there was a theiftaker in Cheshire
whose name was Catterling, and he was renowned when
he came upon highwaymen & footpads, not just for
chopping them into little pieces, but for grinning
'orribly as he did so.  "Grin like a Cheshire Catterling",
became a byeword.  In time, people shortened it to "Cat"
and even though it really meant a feline.
  
So the unofficial "trademark" for Nottingham which 
everone put on their goods was a little Robin Hood;
and for Cheshire, a cats head with a grin.
You would see it on the end of Cheshire cheeses:
just the head, as if the body had vanisghed away.

And that's where Charles Dodgson (Lewis Carol)
got the idea from.
