(I`m not sure if I`m one of these 'professionals' --- I don`t get paid for
ascii art :o) --- but I`ll answer anyway)

It varies for me. If I think of something to draw myself, then it comes from
my imagination. However sometimes I see a picture or an object and think
"Hey, that could make a nice ascii pic!" and so I grab it and draw it. The
little toy dinosaur here, which I 'drew' about half a year ago think, still
sits on my monitor to this day!
